Breakfast Casserole With Chicken Chunks(5 of 6)

Ingredients
- Garlic (minced), 2 tsp
- 1 red pepper, diced
- Onion (diced), ½ cup
- Chicken (cubed), 1 lb
- Bacon (2 strips, cooked), diced
- 1 large-sized sweet potato (spiralized), 2 ½ cups
- Chicken broth or water, ½ cup
- Spinach, 2 cups
- Paprika, 1 tsp
- 6 medium-sized eggs
- All-purpose seasoning, 1 tsp
- Cayenne, ½ tsp
Preparation
- Place a large pan over low-med heat. Sauté onion, garlic, bacon, peppers, sweet potato and chicken together. Cook for 8 minutes until chicken is thoroughly cooked.
- Add water (or broth), spinach, and seasoning. Stir and continue cooking for 3-5 minutes.
- When done, grease a 9 x 9 pan and transfer all contents to it.
- Add all the eggs in a bowl and whisk them together. Pour it over the top of the mixture in the pan.
- Set to bake for 20 minutes at 375 degrees F. You can even cover and bake.
- If the eggs are not cooked and set, continue cooking for 10 more minutes.
- Your casserole is ready to be served!
