Begin your day with a skillet full of crunchy veggies and chicken. This hearty breakfast recipe is not only delicious for your taste buds but also includes various veggies to make it nutritionally rich and healthy. Follow the recipe below.
Ingredients
- Butter, 2 tbsp
- 1 russet potato (diced)
- 1 sweet potato (diced)
- 1 medium-sized red onion, thick slices
- 5 mushrooms, thick slices
- Broccoli florets, 2 cups
- Pre-cooked chicken (BBQ chicken or chicken sausages), 2 cups
- Red pepper flakes, to taste
- Ground black pepper, to taste
- Salt, to taste
Preparation
- Microwave or boil potatoes (both russet and sweet potatoes) until tender.
- Place a large cast-iron skillet over low-med heat. Add 1 tbsp butter and let it melt.
- Add onion and mushrooms and sauté for 2-3 minutes until tender.
- Add tenderized potatoes and remaining butter and cook until potatoes start to change color.
- Add chicken and broccoli. Stir well to adjust flavors.
- Cook for 3-5 minutes until thoroughly warmed.
- Season with salt, black pepper and red pepper flakes as per your taste.
Note: You can add bell peppers and carrots to add more color and flavor to the breakfast skillet.
