Ingredients
- 4 medium-sized eggs
- Green onion (sliced), 4 tbsp
- Fresh parsley (minced), 2 tbsp
- Salt, ½ tsp
- Tarragon (dried), ¼ tsp
- Pepper, ¼ tsp
- Butter, 1 tbsp
- Black pepper (ground), ¼ tsp
- Celery seed, ½ tsp
- Cooked chicken (cubed), ½ cup
- Mushrooms (sliced), 1 cup
Preparation
- Beat eggs in a large mixing bowl.
- Add onion, tarragon, and parsley and mix. Season with salt and pepper and continue mixing to incorporate together.
- Place a skillet over low-med heat. Add butter and let it melt. Add mushrooms and sauté for a minute. Add egg mixture on the top and let it set.
- Add celery seed and chicken on the top and fold from one side and place it over the other.
- Lift and flip and cook on the other side.
- When the eggs are set, remove and serve warm!
