Tangy buttermilk complements the spicy ingredients in this Cajun chicken salad nicely. Pecans add a hearty crunch, while raisins lend a chewy texture and a hint of sweetness.
Ingredients
4 chicken breasts
Cajun seasoning, to taste
½ cup of buttermilk
4 cups of salad greens
1 bell pepper, diced
1 large tomato, diced
1/2 red onion, thinly sliced
1/4 cup pecans, toasted
1/4 cup raisins
Directions
Rub Cajun seasoning mixture onto chicken, then pour buttermilk over it. Refrigerate for at least 30 minutes.
Grill chicken until thoroughly cooked, and cut into strips.
Place chicken on a bed of greens, and add the remaining ingredients. Top with your favorite dressing.
