- 1 large sweet potato, cooked and chopped
- 1 can chickpeas, drained, rinsed and roasted
- 1 cup cooked quinoa
- 1 large carrot, peeled & julienned
- purple cabbage, shredded
- 2 cups of greens
- Hummus, to taste
- 1 sliced avocado
