The marmalade glaze is what brings out the best flavors of the meatloaf. It makes the meatloaf juicy and flavorful. If you prefer chunky meatloaf, this is the perfect recipe to treat your taste buds to.

Ingredients

  • Ground beef, 1 ½ lbs
  • Cooked stuffing (chop roughly), 2 cups
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 large egg, beaten
  • Orange marmalade, ¼ cup
  • Whole-grain mustard, ¼ cup
  • Extra-virgin olive oil, 2 tbsp
  • Baby arugula, 6 cups
  • Balsamic vinegar, 2 tbsp

Directions

  • Set oven to preheat at 400 degrees F.
  • Combine beef with egg, stuffing, salt and pepper in a large mixing bowl. Mix well until well incorporated. Transfer to a loaf pan and smooth on the top.
  • Bake for 30 minutes.
  • Meanwhile, combine mustard and marmalade in a small mixing bowl. Remove meatloaf from the oven and spread the marmalade mixture on top of the meatloaf. Continue baking for another 20 minutes until cooked through. Remove and set to cool.
  • Slice as you live and serve on top of arugula on the platter. Drizzle with vinegar and oil and enjoy.
