Ingredients
- 2 medium-sized yellow onions
- Tomato paste, 1/3 cup
- Ground beef, 1 ½ lbs
- Breadcrumbs (dry), ½ cup
- White cheddar cheese (grated), 1 cup
- Fresh parsley (chopped), ¼ cup
- 1 egg, beaten
- Black pepper, ½ tsp
- Kosher salt, 3 tsp
- Potatoes (cut into small chunks), ½ lbs
- Olive oil, 2 tbsp
Preparation
- Set the grill to medium head.
- Dice half an onion and place it in a large mixing bowl along with beef, breadcrumbs, tomato paste, parsley, cheddar, and egg.
- Season with ¼ tsp pepper and 2 tsp salt. Combine well.
- Prepare two sheets of foil 3 feet long. Stack on top of one another and fold in half.
- Unfold to create a crease.
- Place the meat mixture in the center of foil and shape it in a loaf.
- Cut remaining onion in wedges and place both potatoes and onions around the loaf.
- Season with more salt and pepper and drizzle with olive oil.
- Fold the foil until everything is wrapped in a tight seal.
- Place on a grill and cook at medium heat. Turning at different sides every 6 minutes.
- Continue grilling until cooked on all sides.
- Let rest for a few minutes and slice.
- Serve immediately and enjoy.
