Topped with crispy bacon, this meatloaf recipe is a double meat treat! Loaded with flavors, this recipe is definitely going to be a super hit, as long as you follow it right. Avoid overcooking to keep it juicy.
Ingredients
- Olive oil, 1 tbsp
- 1 medium-sized onion, chopped
- 2 cloves of garlic, minced
- 1 large-sized celery stalk, chopped
- 1 jalapeno pepper, chopped
- Kosher salt, 2 tsp
- Ground nutmeg, ¼ tsp
- Ground cumin, ½ tsp
- 2 eggs
- Milk, ½ cup
- Tomato ketchup or sauce, ½ cup
- Bread crumbs (dry), 1 cup
- Meatloaf mix (lean ground beef 1 lb, ground lamb or veal ½ lb, ground pork, ½ lb), 2 lbs
- Thick sliced bacon, 4 strips
Preparation
- Set the oven to preheat at 350 degrees F.
- Place a skillet over low-med heat.
- Add oil and heat. Stir in onion, garlic, celery, and jalapeno.
- Cook for 10 minutes until vegetables are tender. Do not brown.
- Season with salt, nutmeg, and cumin.
- Stir well and remove from heat.
- Whisk eggs in a bowl along with tomato sauce, milk, and bread crumbs.
- Add the meat mix along with cooked veggies and combine everything well using your hands. Continue until well incorporated.
- Transfer to a prepared loaf pan.
- Cover with bacon strips. Tuck the bacon strips at the end.
- Set to bake.
- Bake for an hour 15 minutes until cooked through.
- Remove from pan and drain off liquid fat.
- Cut in strips and serve warm and juicy.
