Topped with crispy bacon, this meatloaf recipe is a double meat treat! Loaded with flavors, this recipe is definitely going to be a super hit, as long as you follow it right. Avoid overcooking to keep it juicy.

Ingredients

  • Olive oil, 1 tbsp
  • 1 medium-sized onion, chopped
  • 2 cloves of garlic, minced
  • 1 large-sized celery stalk, chopped
  • 1 jalapeno pepper, chopped
  • Kosher salt, 2 tsp
  • Ground nutmeg, ¼ tsp
  • Ground cumin, ½ tsp
  • 2 eggs
  • Milk, ½ cup
  • Tomato ketchup or sauce, ½ cup
  • Bread crumbs (dry), 1 cup
  • Meatloaf mix (lean ground beef 1 lb, ground lamb or veal ½ lb, ground pork, ½ lb), 2 lbs
  • Thick sliced bacon, 4 strips

Preparation

  1. Set the oven to preheat at 350 degrees F.
  2. Place a skillet over low-med heat.
  3. Add oil and heat. Stir in onion, garlic, celery, and jalapeno.
  4. Cook for 10 minutes until vegetables are tender. Do not brown.
  5. Season with salt, nutmeg, and cumin.
  6. Stir well and remove from heat.
  7. Whisk eggs in a bowl along with tomato sauce, milk, and bread crumbs.
  8. Add the meat mix along with cooked veggies and combine everything well using your hands. Continue until well incorporated.
  9. Transfer to a prepared loaf pan.
  10. Cover with bacon strips. Tuck the bacon strips at the end.
  11. Set to bake.
  12. Bake for an hour 15 minutes until cooked through.
  13. Remove from pan and drain off liquid fat.
  14. Cut in strips and serve warm and juicy.
