You’ll be shocked when you discover just how easy it is to make these Funfetti cheesecake squares. You don’t even need graham crackers for the crust!
We recommend using rainbow sprinkles to top these Funfetti cheesecake squares, but you can also opt for seasonal colors. Try red and green sprinkles for Christmas, or coat the cheesecake squares with pastel colors for Easter or a spring wedding shower.
Ingredients
Crust
- 25 Golden Oreo cookies
- 4 tsp of butter, melted
Cheesecake Squares
- 4 packages of cream cheese, softened
- 1 cup of sour cream
- 1¼ cup of granulated sugar
- 1 cup of Funfetti cake mix
- 3 eggs
- 2 tsp of vanilla extract
- 4 Tbsp of sprinkles
Preparation
- Preheat oven to 350 degrees Fahrenheit and set aside a 13 x 9 metal pan.
- Crush Golden Oreos into fine crumbs using a food processor or a rolling pin.
- Add melted butter to the Oreo mixture, then process until fully incorporated.
- Pour butter-covered cookie crumbs into the bottom of a 13 x 9 metal pan, and set aside.
- In mixer, cream together cream cheese and sour cream until smooth, then add sugar and Funfetti cake mix. Beat until smooth, scraping down the sides with a spatula thoroughly combine ingredients.
- Add one egg at a time, stirring after each addition, then add vanilla extract and sprinkles. Stir by hand, not with a blender or mixer, to avoid over-mixing.
- Pour cheesecake batter over prepared Oreo crust.
- Bake at 350F for 35 minutes or until the center of the cheesecake is set.
- After the cheesecake cools slightly, top with additional sprinkles.
- Refrigerate the Funfetti cheesecake squares for a minimum of 4 hours before cutting and serving.
