Here’s another lemon cake we can’t get enough of.
Ingredients
For the Cake:
- 2 cups organic cake flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick of butter, at room temperature
- 1 cup sugar
- 2 large eggs, at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1 teaspoon lemon extract
- 1 cup buttermilk
For the Filling:
- 1 cup of lemon curd
For the Frosting:
- 6 large egg whites
- 1 1/2 cups sugar
- 3 1/2 sticks butter, cut into small pieces
- 1 1/2 teaspoons lemon extract
For the garnish:
- Mint leaves
- Fresh pansies
Preparation
- Preheat oven to 300 degrees Fahrenheit. Grease or line three 6-inch cake pans.
- Bake for approximately 30 minutes, then top with filling and frosting. Make sure to frost each layer.
- Garnish with mint leaves and flowers.
