One scrumptious bite of this peppermint mocha cake will leave you feeling festive, even if Christmas is months away.
Ingredients
Cake
- 1 chocolate cake mix (substitute the water required for the mix with coffee)
- ½ tsp peppermint extract
Frosting
- ½ cup butter, softened
- ½ cup shortening
- ½ cup marshmallow cream
- 3½ cups powdered sugar
- ½ cup baking cocoa
- 1-2 tbsp milk
- 1 tsp peppermint extract
Peppermint Whipped Cream:
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- ½ tsp vanilla
- ½ tsp peppermint extract
Garnish
- ¼ cup crushed candy canes
Preparation
- Preheat oven to 350 degrees Fahrenheit and line two cake pans with parchment paper.
- Combine cake ingredients, taking care to mix the dry ingredients and wet ingredients separately before combining them.
- Bake for approximately 30 minutes and let cool.
- Coat cakes with frosting, making sure to add some between the two layers of cake.
- Top with whipped cream and candy canes.
