Most Americans love to bake pumpkin pies at home. With this recipe, you will get the old and traditional flavor of pumpkin pie, but with one exception.

Instead of eating pumpkin pie, you will be eating pumpkin bars—the same great taste, but in a different shape.


Pumpkin Bars:

  • 1 2/3 cups of sugar (granulated)
  • 1 cup of vegetable oil
  • 1 tsp of baking soda
  • 1 tsp of salt
  • 15 oz. can of pumpkin
  • 2 cups of all-purpose flour (sifted)
  • 2 tsp of baking powder
  • 2 tsp of ground cinnamon
  • 4 eggs


  • 1/2 cup of margarine (softened)
  • 8 oz. of cream cheese (softened)
  • 2 cups of confectioners' sugar (sifted)
  • 1 tsp of vanilla extract


  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Use an electric mixer to combine oil, pumpkin, sugar, and eggs.
  3. In a bowl, add baking soda, salt, flour, baking powder, and cinnamon and stir to combine.
  4. Add the dry mixture to the pumpkin mixture and mix to combine.
  5. On a greased baking pan (13 X 10), spread the batter, baking it for about 30 minutes.
  6. Allow it to cool, and then slice into bars.
  7. Make the icing by combining butter and cream cheese in a bowl, using an electric mixer.
  8. Include the sugar and mix to combine.
  9. Add in vanilla and mix to combine.
  10. Spread the icing on the pumpkin bars.
