Refreshing Chicken Salad With Pomegranate And Spinach(3 of 6)

Ingredients
- Baby spinach leaves (rinsed and drained), 2-3 cups
- ¼ large-sized red onion, thinly sliced
- Feta cheese (crumbled), ½ cup
- Pre-cooked chicken breast (boneless, skinless, diced), 2 cups
- Alfalfa sprouts, ¼ cups
- Balsamic vinaigrette, 4 tbsp
- Walnuts (crumbled), ½ cup
- 1 medium-sized pomegranate, peel and separate seeds
- Salt, to taste
Preparation
- In a large salad bowl, place spinach and season with salt.
- Prepare chicken as you like with light flavors and/or herbs and allow cooling. Dice into small chunks.
- Add chicken on top of the spinach along with red onion, feta cheese, walnuts and sprouts.
- Add pomegranate seeds and drizzle with balsamic vinaigrette.
- Toss to adjust flavors and serve fresh for refreshing flavors.
