Ingredients
- 1/2 cup of sake
- 1/4 cup of sweet Japanese rice wine
- 1/4 cup of soy sauce
- 1 tbsp of vegetable oil
- 4 salmon fillets (boneless, with skin, and 1 inch thick)
- Salt
Preparation
- Combine rice wine, sake, and soy sauce in a bowl and set aside
- In a skillet, heat 1 tbsp of oil over medium high heat
- Season the fish with salt
- Place the fish skin down on the fillet, cooking it for 4 minutes
- Cook the other side for 2 minutes and place it on plate
- Remove the fat from the pan, add the rice wine mix, wait for it to boil over medium high heat, and cook for 4 minutes to reduce it by two-thirds
- Add the fish, skin side up, and cook it while pouring sauce on top of it for 2 minutes
- Serve
