Pasta With Peppers And Cheese(4 of 5)

Ingredients
- 12ounces short pasta (such as gemelli or penne)
- 1/4cup extra-virgin olive oil
- 2 red bell peppers, sliced
- 2 cloves garlic, minced
- 2 bunches arugula, thick stems removed
- 12ounces bocconcini (small balls of fresh mozzarella), cut in half, or fresh mozzarella, cut into bite-size pieces
- Salt and pepper
Preparation
- Cook pasta according to the package directions.
- Reserve ½ cup of the cooking water, drain the pasta, and set aside.
- Rinse pot.
- Heat olive oil in the pasta pot over medium heat.
- Add bell peppers and garlic. Cook; stirring occasionally, until the peppers are tender.
- Add the arugula, bocconcini, cooked pasta, reserved pasta water, salt and pepper.
- Cook, stirring, about one minute.
