Spicy Pork, Squash, Bean, and Corn Stew (2 of 6)

Ingredients

  1. 1 can of black beans (drained)
  2. 1 can of pinto beans (drained)
  3. 1 can of tomatoes (chopped)
  4. 1 lb. pork loin (trimmed and sliced into 1-inch cubes)
  5. 1 tsp of ground cumin
  6. 1 yellow onion (diced)
  7. 1 yellow squash (diced)
  8. 1/2 bunch of cilantro (coarsely chopped)
  9. 1/2 cup of roasted green chilies
  10. 2 cups of corn kernels
  11. 2 tbsp of olive oil
  12. 3 garlic cloves (minced)
  13. 4 cups of low-sodium chicken stock
  14. Salt and black pepper to taste

Preparation

  1. Season the meat with salt, black pepper, and cumin.
  2. In a saucepan, add oil and place it over medium-high heat.
  3. Include pork and cook it for 6 minutes, turning it as you cook it.
  4. Place pork in a bowl and put it aside.
  5. Add onion to the pan and sauté it, stirring occasionally, for 7 minutes.
  6. Include garlic and sauté it, stirring occasionally, for 3 minutes.
  7. Place pork back into the pan, add squash and stock, and bring to a boil.
  8. Decrease the heat to medium-low heat, cover it, and let it simmer for 30 minutes.
  9. Include beans, corns, tomatoes, and chilies, uncover the pot, and let to cook for 40 minutes over medium heat.
  10. Garnish it with cilantro and serve.
