Do you want a hearty helping of chickpea and vegetable curry? Our slow cooker recipe will make you go “yum.”

If you are mom who struggles to get her kids to eat vegetables, this is sneaky way to get them to eat them.

Ingredients

  • 1 can of chickpeas (rinsed and drained)
  • 1 can of light coconut milk
  • 1 can of vegetable broth
  • 1 cup of carrots (sliced)
  • 1 cup of frozen green beans
  • 1/2 cup of onion (chopped)
  • 1/4 cup of basil leaves (shredded)
  • 3 cups of cauliflower florets
  • 3 tsp of curry powder

Preparation

  1. In a slow cooker, add chickpeas, cauliflower, green beans, onion, and carrots.
  2. Add curry and broth next.
  3. Cover and cook it on low for 6 hours.
  4. Add in coconut milk and basil leaves.
  5. Serve with rice.
