Ingredients

  • Baking potatoes, 3
  • Cream cheese, ½ cup
  • Sharp cheddar cheese, 1 ¾ cups
  • Milk, ½ cup
  • Onion (chopped finely), ¼ cup
  • Frozen spinach (chopped), 10 ounces
  • Green onions (sliced), 1
  • Black pepper, to taste
  • Salt, to taste

Preparation

  1. Preheat oven to 400 degrees F.
  2. Poke holes in potatoes with fork and bake for 1 hour 15 minutes or until tender. Take out once done and let cool.
  3. Cut in half and take out the pulp of the potato, leaving a thin layer behind.
  4. Mash the pulp, add milk and cream cheese to it and whisk. Then add cheddar cheese, spinach, salt and pepper. Mix thoroughly.
  5. Scoop the mashed potato mixture into the potato cover, sprinkle green onions on it and bake for 15-17 minutes.
  6. Serve immediately!
