Oats And Lemon Muffins(4 of 6)

Ingredients
- Rolled oats, 1 cup
- Flour, 1 cup
- Shredded lemon peel, 2 tbsp
- Egg, 1
- Poppy seeds, 1 tbsp
- Sugar, ½ cup
- Lime curd, 1/3 cup
- Milk, ¾ cup
- Cooking oil, ¼ cup
- Baking powder, 1 tbsp
- Salt, a pinch
Preparation
- Grease 12 muffin cups and set aside. Preheat the oven to 35o degrees F.
- In a bowl, whisk oil, egg and milk.
- Combine all the dry ingredients in a separate bowl and create a well in the centre. Add the egg mixture and mix well.
- Pour the batter in the muffin cups so that they are 2/3 filled. Put 1 tsp of lime curd on top of the batter and bake for 20 minutes. Insert a toothpick to see if the center is done. Take out of the oven and let cool.
- Serve warm.
