Ingredients
- Dried apricots (snipped), ½ cup
- Almonds (sliced), 1/3 cup
- Flour, 2 cups
- Brown sugar, 2/3 cups
- Butter, ½ cup
- Buttermilk, 1 cup
- Egg, 1
- Vanilla extract, ½ tsp
- Almond extract, ½ tsp
- Baking soda, ½ tsp
- Baking powder, 1 tsp
- Salt, a pinch
Directions
- Take twelve 2 ½ inch muffin cups and grease them. Set aside.
- Preheat oven at 350 degrees F.
- Take a bowl and mix together butter, egg, buttermilk, brown sugar, almond extract and vanilla extract. Also add in apricots.
- In a different bowl, mix together flour, salt, baking powder and baking soda. Make a gap in the centre and add all the wet ingredients to it. Mix together but don’t fold in too much.
- Put the batter in muffin cups about 2/3 of the way. Sprinkle the almonds on top.
- Bake for 20 minutes or until golden. Check with a skewer to see if the centre is done and then take out.
- Let cool for 5 minutes and then take out of the muffin cups. Serve!
