Smoky Cheesy Muffins(5 of 6)

Ingredients
- Yellow cornmeal, 1 cup
- Flour, 1 cup
- Smoked cheddar cheese, 1 cup
- Sunflower seeds, as per taste or ½ cup
- Cayenne pepper, ½ tsp
- Milk, 1 cup
- Butter, ¼ cup
- Sugar, ¼ cup
- Eggs, 2
- Baking powder, 1 tbsp
Preparation
- Preheat oven to 400 degrees F. Grease 12 muffin cups and set aside.
- In a bowl mix together flour, cornmeal, baking soda, sugar and cayenne pepper.
- Add eggs, milk and butter to another bowl and beat with an electric beater.
- Add the eggs to the flour mixture.
- Shred the cheese and add it to the flour mixture, until smooth.
- Put the batter in muffin cups almost till the top and bake for 15 minutes.
- Take out when a toothpick inserted in centre comes out clean.
- Let cool and serve warm.
