Creamy Strawberry Crepes(6 of 6)

Ingredients
- Milk, ½ cup
- 3 eggs
- Water, ½ cup
- Sifted confectioners’ sugar, 1 ¼ cup
- Lemon juice, 1 tbsp
- Lemon zest, 1 tsp
- Butter (melted), 3 tbsp
- Vanilla extract, ½ tsp
- All-purpose flour, ¾ cup
- Heavy cream (whipped), 1 cup
- Salt, ½ tsp
- Strawberries (sliced), 4 cups
- Cream cheese (softened), 1 package
Preparation
- Place milk, water, eggs, flour, melted butter, and salt in the blender. Process until smooth.
- Blend lemon juice, confectioners’ sugar, lemon zest, cream cheese and vanilla using an electric mixer. Blend until smooth. Stir in whipped cream.
- Heat a non-stick skillet or griddle over medium heat. Scoop the batter on the griddle. Rotate the pan to spread the batter thinly on the bottom of the pan. Cook for a minute and flip over. Continue cooking until the crepe is cooked. Remove and place on a platter. Cover with damp towel while you prepare the rest of the crepes using the batter.
- When all crepes are ready serve each with cream cheese and strawberries. Roll up the crepes and top with more cream cheese and strawberries. Serve immediately and enjoy!
