This is a unique breakfast recipe that your mom will love for the special mother’s day. The richness of creamy toast with the delicious taste of blueberries is definitely a treat on its own. Surprise your mom with this recipe that is one of a kind!
Ingredients
- Day-old bread (slice into cubes), 12 slices
- Maple syrup, 1/3 cup
- Cream cheese, 2 packages
- White sugar, 1 cup
- Fresh blueberries, 2 cup
- Cornstarch, 2 tbsp
- 12 eggs, beaten
- Water, 1 cup
- Milk, 2 cups
- Vanilla extract, 1 tsp
- Butter, 1 tbsp
Preparation
- Prepare a baking dish and grease it with oil. Arrange half of the bread cubes on the baking dish and top with cream cheese. Scatter 1 cup blueberries on top of the cream cheese in a layer and cover it up with the remaining bread.
- Combine wet ingredients in a large bowl including eggs, milk, vanilla extract, and maple syrup. Spread the mixture evenly over the bread cubes. Cover and refrigerate overnight.
- Remove from the refrigerator and set aside for 30 minutes. Meanwhile, preheat the oven to 350 degrees F.
- Cover the baking sheet and set to bake for 30 minutes. Remove, uncover and continue to bake for another 30 minutes.
- Place a medium sized saucepan over low-med heat. Mix water, cornstarch, and sugar. Bring the mixture to a boil stirring constantly. Add remaining blueberries and stir. Reduce heat and simmer for 10 minutes.
- Add butter to the mixture and pour over the French toast when baked.
- Serve fresh and let your mother have some good time!
