Mother’s Day Special Lemon-Poppy Seed Pancakes(2 of 6)

Every mommy loves pancakes but if you add some poppy seeds and lemon in the batter, it will enhance the flavors and make it more delicious. If you want to make mother’s day more special for your mom, go ahead and prepare these delicious pancakes!
Ingredients
- Milk, ¾ cup
- White sugar, 2 tbsp
- Vinegar, 1 tbsp
- Baking powder, 1 tsp
- Lemon juice, 1 tbsp
- Baking soda, ½ tsp
- 1 medium-sized egg
- Salt, ½ tsp
- Butter (melted), 2 tbsp
- Poppy seeds, 1 tsp
- Vanilla extract, ½ tsp
- Lemon zest, 1 tsp
- All-purpose flour, 1 cup
- Cooking spray
Preparation
- In a mixing bowl, stir in vinegar, lemon juice, and milk. Stir well and let curdle for 10 minutes. Whisk in vanilla extract, butter, and egg and combine well.
- In another bowl, mix baking powder, sugar, flour, salt, baking soda, lemon zest and poppy seeds. Stir in the wet mixture and whisk until the batter is well combined and smooth.
- Place a skillet over medium heat and head with cooking spray. Pour batter in batches and cook for 2 minutes at low-med heat until bubbles appear. Flip and cook for another 2 minutes on the other side.
- Serve with maple syrup and fruits of your choice. Enjoy!
