When it is not the pie day, it is often the tart day because tarts are incredibly delicious with their sweet flavor and crunchy texture. This lemon tart recipe is quite easy and is perfect for days when you are having guests over for dinner or lunch.
Ingredients
- 3/8 cup butter
- confectioners’ sugar (1/4 cup)
- lemon juice (1/4 cup)
- all-purpose flour (1 cup)
- 3 eggs
- white sugar (1 cup)
- grated lemon zest (1 tablespoon)
- all-purpose flour (3 tablespoons)
- confectioners’ sugar for dusting (2 tablespoons)
Preparation
- Preheat the oven to 350 degrees F.
- Add confectioners’ sugar, butter, and 1 cup flour in a food processor and mix until well combined.
- Press the dough evenly into a 9-inch round pie plate.
- Place in the oven and bake for 15 minutes or until golden.
- Now mix together the white sugar, eggs, lemon juice, lemon zest and 3 tbsp flour and combine. Pour this over the crust and bake for another 30 minutes. Once the batter is firm, take the baking dish out of the oven.
- Let it cool a little and sprinkle with more confectioners’ sugar and cut into small triangles.
