The best lunch to keep your work meals healthy is to make some fresh salad and nothing fancy. A great way to take salad to work is to place them in a glass jar. Salad in a jar not only looks interesting, but is also an easy way to enjoy some fresh food at work.

This salad recipe is quite easy and doesn’t involve hardcore cooking. So even if you are getting late for work, you will still have time to assemble this amazing salad.


  • 1 cup snap peas (halved)
  • 1 cup orzo
  • 1 pint cherry tomatoes (halved)
  • 1 tablespoon lime juice
  • 3 tablespoons olive oil
  • 8 ounces mozzarella balls
  • ½ teaspoon kosher salt
  • 2 tablespoon lemon zest (grated)
  • ½ teaspoon black pepper (freshly ground)
  • 5 ounces baby spinach
  • 4 quart-size canning jars (with lids)


  1. In a saucepan, cook the orzo following the package instructions.
  2. Once done, drain and let it cool in a bowl.
  3. Now in a separate bowl, whisk together the lemon juice, oil, lemon zest, salt and pepper, and herbs.
  4. Add this dressing to the bottom of each of the jar.
  5. Now is the time to add the salad ingredients into each of the four jars.
  6. Start by placing ½ cup cherry tomatoes followed by ¼ cup orzo.
  7. Now continue adding the rest ingredients in the following order; 1/4 cup snap peas, 2 oz mozzarella, and about 1-1/4 oz of baby spinach leaves.
  8. Once the jar is filled, close the lid tightly and place in the refrigerator to cool it.
  9. Just pull out the jar out of the fridge and take it to work.
