The classic sweet and sour flavor of authentic Chinese cuisine can be prepared at home in just an hour. This recipe is the perfect blend of tender chicken and flavorful sauce. Follow the recipe and enjoy.

Ingredients

  • Pineapple chunks (drained, reserve juice), 1 can
  • Cornstarch, ¼ cup
  • Water, 1 ¾ cups divided
  • White sugar, ¾ cup
  • Distilled white vinegar, ½ cup
  • Orange food color, 2 drops
  • 8 chicken breast halves (boneless), cut into chunks
  • Self-rising flour, 2 ¼ cups
  • Vegetable oil, 2 tbsp
  • Cornstarch, 2 tbsp
  • Salt, ½ tsp
  • Ground white pepper, ¼ tsp
  • 1 large egg
  • Water, 1 ½ cups
  • Vegetable oil for frying, 1 quart
  • 2 medium green bell pepper, cut into small pieces

Preparation

  1. Stir together sugar, 1 ½ cups water, vinegar, orange food color, and pineapple juice. Add to a saucepan, heat and bring the mixture to a boil. Remove from stove. Combine ¼ cup water and ¼ cup cornstarch in a bowl. Add to the saucepan slowly. Stir continuously and let the mixture thicken. Do not heat.
  2. Combine 2 tbsp oil, flour, salt, 2 tbsp cornstarch, and 1 egg in a mixing bowl. Add 1 ½ cups water in the dry mixture to prepare a smooth, thick batter. Blend thoroughly and add chicken chunks. Stir to coat well.
  3. Add oil to a skillet and place over low-med heat. When oil is hot, add marinated chicken and fry for 10 minutes. Don’t leave unattended to avoid burning. Cook until golden brown. When done, remove and drain on paper towels.
  4. To serve, layer green peppers on a serving platter, add pineapple chunks, and place cooked chicken on the top. Pour the sweet and sour sauce on the top and toss to combine. Serve immediately for delicious flavors. Ideally served with fried rice.
