Ingredients
- Sesame oil, ½ tbsp
- 1 medium-sized onion, chopped
- Soy sauce, 2 tbsp
- Cooked chicken meat (cubed), 1 ½ lbs
- 2 large-sized carrots, diced
- 2 stalks celery (chopped)
- Fresh pea pods (halved), ¾ cup
- 1 large-sized red bell pepper, diced
- ½ large-sized green bell pepper, diced
- 2 large eggs
- Cooked white rice (refrigerated), 6 cups
- Soy sauce, 1/3 cup
Preparation
- Place a large skillet over medium heat. Add oil and stir in onion. Cook until tender and translucent for about 3 minutes.
- Add chicken along with 2 tbsp soy sauce. Stir well to combine flavors. Continue stir frying for 6 minutes until chicken is almost cooked.
- Stir in celery, carrots, pea pods, red bell pepper, and green bell pepper. Stir well to combine all ingredients and stir-fry for another 5 minutes. Add rice to the skillet and toss well to combine.
- Finally, add scrambled eggs along with remaining 1/3 cup soy sauce. Serve and toss well.
- Heat through for another minutes and serve hot for delicious flavors.
