Ingredients

  • 1 cup of cake flour (sifted)
  • 5 eggs
  • 1 tsp of baking powder
  • 1 tsp of almond extract
  • 3/4 cup of sugar
  • 1/4 tsp of salt
  • 1/2 tsp of cream of tartar

Preparation

  1. Line a cake pan with parchment paper (8 X 8)
  2. In a bowl, add flour, salt, and baking powder.
  3. From the eggs, separate the yolks from the egg whites.
  4. In another bowl, beat the egg whites.
  5. Add cream of tartar and beat again.
  6. Add 1/4 cup of sugar and beat for about 1 minute.
  7. Add the yolks and 1/2 cup of sugar.
  8. Beat the mixture for 2 minutes.
  9. Add the almond extract, egg mixture, flour mixture, and stir to mix, but do not beat.
  10. Fill the cake pan with the batter.
  11. Bring the wok to a boil, and then turn down the heat.
  12. Steam and cover the cake for about 25 minutes.
  13. Insert a toothpick to see if it is fully cooked through.
  14. Cool the cake at room temperature.
  15. Cut into squares and serve.
