Ingredients

  • All-purpose flour, 1 ¼ cups
  • Baking powder, 1 ½ tsp
  • Salt, ¼ tsp
  • Baking soda, ½ tsp
  • Ground ginger, 2 tsp
  • Cinnamon, ½ tsp
  • 2 large-sized eggs
  • Crystallized ginger (finely chopped), ¼ cup
  • Pumpkin puree (canned), ½ cup
  • Buttermilk, ¾ cup
  • Sugar, ½ cup
  • Vanilla extract, ¾ tsp
  • Unsalted butter, 3 tbsp

Preparation

  1. In a large mixing bowl, combine baking powder, flour, salt, baking soda, cinnamon, and ground ginger. Take 2 tbsp of this mixture and place in a separate small bowl. Combine with crystallized ginger and set aside.
  2. Whisk pumpkin puree, buttermilk, eggs, vanilla, and sugar in another bowl. Stir and keep mixing the flour until fully incorporated. Stir in the reserved ginger-flour mixture along with butter. Mix well until it reaches desired consistency. Avoid over mixing.
  3. Heat a waffle iron and use ½ cup batter for one waffle (or as per your preference). Keep warm until all of them are done. Serve with honey or maple syrup and your choice of chopped berries and enjoy!
