This is a perfect recipe to fill yourself up for breakfast and serve to a crowd for a family brunch. The creamy flavor blended with eggs and ham is surely going to be a treat for your taste buds.
Ingredients
- 8 large-sized eggs
- Ham (chopped), ½ cup
- Heavy cream, ¾ cup
- Sea salt, to taste
- Black pepper, to taste
- Unsalted butter, 2 tbsp
- Asparagus (trimmed, sliced into small chunks), ½ lb
- 6 medium-sized radishes, thinly sliced
- 4 scallions, sliced
- Goat cheese (crumbled), ½ cup
- Garlic (finely chopped),1 clove
Preparation
- Set the oven to preheat at 350 degrees F.
- In a bowl, whisk together eggs, ham, cream, pepper and salt. Whist until combined.
- Place a nonstick, oven-friendly skillet over med-high heat. Add butter and melt. stir in asparagus and sauté for 2-4 minutes until tender. Add scallions, radishes, and garlic and continue cooking for another 2 minutes until scallions are just wilted.
- Adjust heat to low and add egg mixture over the veggies. Cook undisturbed for 3-4 minutes until it begins to set. Sprinkle goat cheese and place the skillet in the oven to bake. Bake for 15 minutes until set.
- Remove and serve immediately for best flavors.
