Ingredients

For The Cupcakes You'll Need:

  • 1 box gluten-free yellow cake mix
  • 1/2 cup melted butter
  • 2/3 cup water
  • 3 beaten eggs
  • 2 tbsps grated lemon peel

And For The Icing:

  • 2 cups of powdered sugar
  • 1/4 cup softened butter
  • 1 tsp grated lemon peel
  • 2 or 3 tbsps lemon juice

Preparation

  1. Heat oven to 350 degrees. Place cups in muffin pan.
  2. Stir cake mix, water, 1/2 cup melted butter, eggs, and lemon peel.
  3. Pour batter into cups evenly.
  4. Bake 18-23 mins. Let cool.
  5. While cooling, mix powdered sugar, 1/4 cup butter, and 1 tbsp lemon juice.
  6. Add remaining lemon juice gradually.
  7. Ice cupcakes.
