4) Gluten-Free Lemon Cupcake with Lemon Buttercream Icing (4 of 5)

Ingredients
For The Cupcakes You'll Need:
- 1 box gluten-free yellow cake mix
- 1/2 cup melted butter
- 2/3 cup water
- 3 beaten eggs
- 2 tbsps grated lemon peel
And For The Icing:
- 2 cups of powdered sugar
- 1/4 cup softened butter
- 1 tsp grated lemon peel
- 2 or 3 tbsps lemon juice
Preparation
- Heat oven to 350 degrees. Place cups in muffin pan.
- Stir cake mix, water, 1/2 cup melted butter, eggs, and lemon peel.
- Pour batter into cups evenly.
- Bake 18-23 mins. Let cool.
- While cooling, mix powdered sugar, 1/4 cup butter, and 1 tbsp lemon juice.
- Add remaining lemon juice gradually.
- Ice cupcakes.
