Ingredients

  • 1 Granny Smith apple (sliced into wedges)
  • 1 onion (sliced into wedges)
  • 1 whole chicken
  • 1/3 cup and 1 1/2 tsp of apple cider vinegar (divided)
  • 1/8 tsp of red pepper
  • 12 Bibb lettuce
  • 2/3 cup of mayonnaise
  • 4  bacon slices (uncooked and chopped)
  • 6 smashed garlic cloves
  • Salt and black pepper

Preparation

  1. Place the onion, apple, garlic cloves, and bacon slices in the slow cooker (3 qt.)
  2. Add 1/3 cup of vinegar, chicken, and 1/2 cup of water in the slow cooker
  3. Sprinkle black pepper and salt on the chicken
  4. Cover the slow cooker and cook for 6 hours on low
  5. Take the meat from the bones and throw away skin and bones
  6. Shred the meat using two forks
  7. In wire mesh strainer, pour the cooking liquid into a measuring cup and remove solids
  8. Put the cooking liquid aside for 10 minutes
  9. Skim fat and save 1/3 cup of cooking liquid and add the rest of it to the chicken
  10. Combine red pepper, 1/3 cup of cooking liquid, mayonnaise, and rest of the vinegar
  11. Season it with black pepper and salt, place the chicken in the lettuce leaves, drizzle sauce, and serve
