These chicken flautas taste like they were fried in a skillet, but they’re actually made in the oven.

Ingredients

  • 1 pound of chicken tenderloins
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of salt
  • Black pepper
  • 4 green onions, sliced
  • 2 tablespoons of fresh cilantro, chopped
  • 2 cups of pepper jack or Mexican blend cheese, shredded
  • 8 flour tortillas
  • Tomatillo sauce, either homemade or store bought

Preparation

  1. Line a baking pan with aluminum foil and brush with olive oil.
  2. Combine spices in a bowl and use them to season chicken.
  3. Heat chicken in a skillet drizzled with olive oil for a few minutes on each side, then toss with green onions and cilantro.
  4. Fill tortillas with ingredients and place seam-side down in the baking pan.
  5. Brush with olive oil and bake for 6 to 8 minutes at 425 degrees Fahrenheit.
  6. Remove from oven, turn over with tongs, brush with olive oil, and bake for 4 more minutes.
