These chicken flautas taste like they were fried in a skillet, but they’re actually made in the oven.
Ingredients
- 1 pound of chicken tenderloins
- 2 tablespoons of olive oil
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of salt
- Black pepper
- 4 green onions, sliced
- 2 tablespoons of fresh cilantro, chopped
- 2 cups of pepper jack or Mexican blend cheese, shredded
- 8 flour tortillas
- Tomatillo sauce, either homemade or store bought
Preparation
- Line a baking pan with aluminum foil and brush with olive oil.
- Combine spices in a bowl and use them to season chicken.
- Heat chicken in a skillet drizzled with olive oil for a few minutes on each side, then toss with green onions and cilantro.
- Fill tortillas with ingredients and place seam-side down in the baking pan.
- Brush with olive oil and bake for 6 to 8 minutes at 425 degrees Fahrenheit.
- Remove from oven, turn over with tongs, brush with olive oil, and bake for 4 more minutes.
