Salmon is often touted as one of the best brain foods available, thanks to its high amount of omega-3 fatty acids, vitamin B12, and vitamin D. It’s also packed with protein, which helps you fight hunger pangs all night long.
There are plenty of healthy salmon recipes floating around the Internet, but we chose this one because it’s quick and easy. You only need a few ingredients and 20 or so minutes of cook time.
Ingredients
- 4 salmon fillets
- 4 tablespoons of olive oil
- 3 tomatoes, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper
Preparation
- Place each piece of salmon on its own sheet of foil and top with 1 tablespoon of olive oil, diced tomatoes, and seasonings.
- Fold foil packets closed, and place them on a large baking sheet.
- Bake at 400 degrees Fahrenheit for 20 to 25 minutes.
