Ingredients
- 2 cups of onion (chopped)
- 1/2 of cup kalamata olives (pitted)
- 1/2 cup of drained oil-packed and sun-dried tomato halves (julienne)
- 2 of tbsp fresh lemon juice
- 1 1/2 tsp of garlic (minced)
- 1 tsp of Greek seasoning mix
- 1/2 tsp of salt
- 1/4 tsp of freshly ground black pepper
- 1 to 4-pound of turkey breast (trimmed and boneless)
- 1/2 cup of fat-free and lower-sodium chicken broth (divided)
- 3 tbsp of all-purpose flour
- Thyme sprigs for garnishing (chopped)
Preparation
- Combine onion, olives, lemon juice, tomato, garlic, seasoning mix, salt, ground pepper, and turkey in an electric slow cooker.
- Add 1/4 chicken broth, cover it, and cook it for 7 hours.
- In a small bowl, pour 1/4 cup chicken broth, flour, and stir, until fully combined.
- Add the broth and flour mixture into a slow cooker.
- Cover and cook it on low for 30 minutes.
- Slice the turkey into slices and serve.
