  • 2 cups of onion (chopped)
  • 1/2 of cup kalamata olives (pitted)
  • 1/2 cup of drained oil-packed and sun-dried tomato halves (julienne)
  • 2 of tbsp fresh lemon juice
  • 1 1/2 tsp of garlic (minced)
  • 1 tsp of Greek seasoning mix
  • 1/2 tsp of salt
  • 1/4 tsp of freshly ground black pepper
  • 1 to 4-pound of turkey breast (trimmed and boneless)
  • 1/2 cup of fat-free and lower-sodium chicken broth (divided)
  • 3 tbsp of all-purpose flour
  • Thyme sprigs for garnishing (chopped)


  1. Combine onion, olives, lemon juice, tomato, garlic, seasoning mix, salt, ground pepper, and turkey in an electric slow cooker.
  2. Add 1/4 chicken broth, cover it, and cook it for 7 hours.
  3. In a small bowl, pour 1/4 cup chicken broth, flour, and stir, until fully combined.
  4. Add the broth and flour mixture into a slow cooker.
  5. Cover and cook it on low for 30 minutes.
  6. Slice the turkey into slices and serve.
