Macaroni and Cheese with Three Cheeses(1 of 5)

Ingredients
- Salt
- 5 cups of extra-sharp cheddar (shredded)
- 4 cups of full-fat milk
- 3 cups of yellow American cheese (shredded)
- 3 cups of gouda (shredded)
- 2 lbs. of elbow macaroni
- 2 1/2 sticks of butter (unsalted)
- 1/4 tsp of black pepper
- 1/2 tsp of seasoned salt
- 1/2 tsp of salt
- 1/2 tsp of mustard powder
- 1/2 tbsp of smoked paprika
- 1 1/2 cups all-purpose flour
Preparation
- Preheat your oven to 350 degrees Fahrenheit
- Place a pot of water, containing salt, to boil
- Place the macaroni into boiling water, cooking it for about 9 minutes, and drain
- Melt two sticks of butters in a 4 qt. pot, placed over low heat
- Add flour, seasoned salt, black pepper, salt, and mustard powder into the pot, cooking for about 2 minutes, stirring frequently with a whisk
- Gradually add milk, whisking and cooking it, until it thickens for about 8 minutes
- Take out the pot from the heat and add in gouda and American cheeses followed by four cups of cheddar cheese, until melted and well combined
- Add the macaroni, mix, and pour the entire mixture into a 3 qt backing dish and glaze with the rest of 1/2 stick of butter
- Garnish it with 1 cup of Cheddar cheese, sprinkle with smoked paprika
- Bake the dish for about 30 minutes
- Serve immediately
