Sweet potatoes stuffed with pulled pork are an excellent alternative to pulled pork sandwiches for folks on a low-carb or gluten-free diet.
Ingredients
- 4 large sweet potatoes
- 1 sweet onion, diced
- Pulled pork, either homemade or from a deli
- Barbecue sauce, to taste
Preparation
- Bake sweet potatoes for approximately 1 hour at 400 degrees Fahrenheit.
- Stuff with pork and onions, then drizzle with barbecue sauce.
