Chicken tortilla soup warms you up on a cold day, but it’s also a popular summertime meal. Make it in a crockpot or slow cooker for a hassle-free dinner that’s ready when you get home from work or school.
Ingredients
- 4 cups of shredded chicken
- 3 cups of chicken broth
- 1 can of tomato sauce
- 1 can of salsa, any variety
- 2 cloves of garlic, chopped
- 1 small yellow or white onion, chopped
- 1 cup of corn
- 1 cup of black beans
- ⅛ cup of fresh cilantro
- Salt and pepper, to taste
Preparation
- Heat on high for 2 hours or low for 4 to 6 hours in a slow cooker.
- Garnish with sour cream and shredded cheese.
