This salad recipe has chicken and the best vegetables to keep you feeling fulfilled and healthy all day long. It is perfect for lunch time or as a side dish for dinner.

Ingredients

  • 3 tablespoon sriracha
  • ¼ teaspoon salt and pepper
  • Juice of 1 lime
  • 2 pieces chicken breasts

For the Salad

  • 1 cup grape tomatoes
  • 4 cups lettuce (chopped)
  • 1/3 cup red onion (finely chopped)
  • 1 avocado (cubed)
  • 8 slices pineapple
  • For the Lime Vinaigrette

  1. 2 teaspoon raw honey
  2. 1/3 cup olive oil
  3. Juice of 2 limes
  4. ¼ cup apple cider vinegar
  5. A pinch of sea salt
  6. Preparation

    1. Let the grill heat and start by seasoning the chicken with salt and pepper.
    2. In a separate bowl, combine together sriracha and lime
    3. Add chicken into the bowl and let it marinade in the fridge for at least 20 minutes.
    4. Once the chicken is properly marinated, place it on the grill.
    5. Slice the pineapple and add it to the grill.
    6. Flip the pineapple slices ensuring that they grill 3 minutes on each side.
    7. In a serving dish, add chopped red onion, tomato, lettuce, and avocado.
    8. Now combine together the dressing and add salt and pepper to taste, and place in the fridge until assembling time.
    9. Keep checking the chicken on the grill and flip it to ensure that it cooks properly from both the sides.
    10. Once the chicken is properly grilled, arrange the salad and combine the dressing.
