Lemon Strawberry Mousse(7 of 10)

Tangy lemon lends a welcome tartness to this sweet, creamy strawberry mousse.
Ingredients
- 3 large egg yolks
- ¼ cup of granulated sugar
- ¼ cup of fresh lemon juice
- 2 teaspoons of lemon zest
- ⅛ teaspoon of salt
- 1 cup of heavy whipping cream
- 3 tablespoons of icing sugar
- 1 teaspoon of vanilla
- 2 cups of strawberries, hulled and sliced
- Sugar, to taste
- White chocolate, for garnish
Preparation
- Make the lemon curd by combining egg yolks, sugar, lemon juice, lemon zest, and salt in a heatproof bowl. Set over a pot of simmering water and whisk for about 10 minutes, until mixture thickens.
- Pour the lemon curd through a sieve, and let it cool.
- Make the Chantilly cream by whipping the cream with an electric mixer until soft peaks form. Mix in icing sugar and vanilla.
- Fold in ⅓ of the Chantilly cream into the lemon curd, then add the second third and final third.
- Hull and slice the strawberries, and add sugar if desired.
- Add 2 heaping spoonfuls of strawberries to each glass, then top them with 2 spoonfuls of lemon mousse and another layer of strawberries. Add a final layer of lemon mousse.
- Top it off with white chocolate shavings and a strawberry.
