Ingredients
- Garlic (chopped), 3 cloves
- Sherry or red wine vinegar, 2 tbsp
- Anchovy filets, 5
- Mustard paste, 1 tbsp
- Extra virgin olive oil, ½ cup
- Parmesan cheese, ½ cup
- Ground black pepper, 1 tsp
- Lemon juice, ¼ cup
- Salt, to taste
Preparation
- Take a mortar and pestle and add garlic, anchovies, salt and pepper to it.
- Bash it till crushed and then add vinegar, lemon juice and mustard to it. Bash some more.
- Take out in a bowl and whisk in the oil slowly, till it emulsifies.
- Add in the cheese and mix some more.
- You can also put the ingredients in the blender and emulsify, but it won’t be as good as when bashed with mortar and pestle.
- The dressing can stay for a week in the fridge without going bad.
