Ingredients
- 1 head garlic
- Extra-virgin olive oil
- Salt & pepper
- 2 tbspn red wine vinegar
- 2 tspn dijon mustard
- 3 tbspn Parmesan, grated
Preparation
- Preheat oven to 400 degrees F.
- Slice the top off 1 head garlic.
- Drizzle garlic with olive oil, wrap in aluminum foil.
- Roast garlic until tender, about 35 minutes.
- Cool, then squeeze out the cloves.
- Whisk 2 tablespoons red wine vinegar, 2 teaspoons dijon mustard, 1/2 teaspoon kosher salt, and pepper to taste.
- Gradually whisk in 1/3 to 1/2 cup olive oil.
Combine all ingredients in blender with garlic and 3 tablespoons grated Parmesan.
