Ingredients

  • 1 head garlic
  • Extra-virgin olive oil
  • Salt & pepper
  • 2 tbspn red wine vinegar
  • 2 tspn dijon mustard
  • 3 tbspn Parmesan, grated

Preparation

  1. Preheat oven to 400 degrees F.
  2. Slice the top off 1 head garlic.
  3. Drizzle garlic with olive oil, wrap in aluminum foil.
  4. Roast garlic until tender, about 35 minutes.
  5. Cool, then squeeze out the cloves.
  6. Whisk 2 tablespoons red wine vinegar, 2 teaspoons dijon mustard, 1/2 teaspoon kosher salt, and pepper to taste.
  7. Gradually whisk in 1/3 to 1/2 cup olive oil.
    Combine all ingredients in blender with garlic and 3 tablespoons grated Parmesan.
