Veggie Tortilla Roll-Ups(4 of 6)

Ingredients
Hummus:
- 1 (15-oz) can chickpeas, (garbanzo beans), drained and rinsed
- 1 clove garlic
- 2 Tbsp tahini
- 3 Tbsp lemon juice
- 1 tsp salt
- ⅓ cup olive oil
Tortilla Roll-Ups:
- ½ cup hummus, (see above)
- 4 whole wheat tortillas
- 2 medium carrots, peeled and grated (about 1 cup)
- 1 avocado, sliced
Preparation
To make hummus:
- Place the chickpeas, garlic, tahini paste, lemon juice, and salt in a food processor and pulse to combine.
- Add the olive oil and pulse until smooth and creamy.
To make roll-ups:
- Spread 2 tablespoons of hummus on each tortilla, taking care to cover the edges, since the hummus will act as a glue to hold the wrap together.
- Sprinkle ¼ cup of the grated carrots along the closest edge of each tortilla, and lay ¼ of the avocado slices on top of the carrots.
- Roll up, slice in half diagonally, and then serve.
