Ingredients

  • 1 cup of broccoli florets
  • 1 cup of cherry tomatoes (halved)
  • 1 cup of fresh corn kernels
  • 1 cup of yellow squash (sliced)
  • 1 tbsp of extra virgin olive oil
  • 1/2 cup of basil (packed, sliced thinly, and divided)
  • 1/4 cup and 2 tbsp of half & half
  • 1/4 tsp of red chili flakes
  • 2 chopped green onions
  • 2 minced garlic cloves
  • 2 tbsp of butter
  • 2 tbsp of parmesan cheese (grated)
  • 4 oz. of cooked penne pasta
  • Black pepper and salt to taste

Preparation

  1. In a skillet, heat butter and olive oil over medium heat.
  2. Add green onions, garlic, and chili flakes
  3. Cook onions for 2 minutes or until they soften
  4. Increase the heat to medium high, add squash, broccoli, and season it with black pepper and salt for 3 minutes
  5. Add corn and tomatoes, letting it cook for 2 minutes
  6. Add cheese and half & half and cook for another minute
  7. Add pasta, half basil, and mix to combine
  8. Garnish it with basil and serve
