Colorful pepper rings transform ordinary fried eggs into a fun, flavorful breakfast that kids (and adults) will love.


  • 1 bell pepper, sliced into rings and deseeded
  • 3 eggs, cracked into individual bowls
  • 2 teaspoons olive oil


Coat a skillet with olive oil and heat pepper rings over medium heat, 1 minute on each side.

Place 1 egg inside each pepper ring and cook for an additional 3 to 5 minutes.
