4) Black Bean Burgers with Veggies and Greek Mayo        (4 of 5)

Ingredients

  1. 2 cans of black beans (rinsed and drained)
  2. 3 tbsp of lemon juice
  3. 2 tsp of oregano (dried)
  4. 2 tsp of salt
  5. 1 tsp of black pepper
  6. 3 garlic cloves (minced)
  7. 2 eggs (beaten)
  8. 1 onion (finely chopped)
  9. 2 tbsp of extra-virgin olive oil
  10. 6 hamburger buns
  11. 1/2 cup of panko breadcrumbs

Greek mayo:

  1. Juice of 1 lemon
  2. 2 tsp of oregano (dried)
  3. 2 garlic cloves (grated)
  4. 1/2 tsp of salt
  5. 1 tsp of black pepper
  6. 1 cup of mayonnaise

Preparation

  1. Combine bread crumbs, beans, 3 tbsp of lemon juice, 2 tsp of oregano, 3 cloves of garlic, eggs, onion, 2 tsp of salt, and black pepper in a bowl
  2. Use a fork to mash the ingredients to shape them into patties, at least 6
  3. Cover and place the patties in the fridge for an hour
  4. Combine Greek mayo ingredients in a bowl and set aside
  5. Heat oil in a pan placed over medium high heat
  6. Cook each side of the patties for 4 minutes
  7. Add burgers, onions, tomatoes, lettuce and Greek mayo to the bottom of the buns
  8. Close the buns and serve
