Pumpkin and Thyme Crusted Roasted Rack of Lamb(2 of 5)

Ingredients

  • 1 cup of breadcrumbs
  • 1 cup of pumpkin purée
  • 1 tbsp of olive oil
  • 2 racks of lamb (excess fat removed)
  • 2 tsp of fresh thyme (chopped)
  • Black pepper
  • Salt
  • Vegetable oil

Preparation

  1. Preheat your oven to 375 degrees Fahrenheit
  2. Season the meat with black pepper and salt
  3. In a skillet, drizzle oil to sear all sides of the meat
  4. Place the lamb in the oven to cook for 20 minutes
  5. Take it out of the oven to let to cool for 30 minutes
  6. Combine salt, black pepper, olive oil, breadcrumbs, and thyme in a bowl
  7. Place the mix on a plate
  8. Spread the pumpkin mix on top of the lamb and coat it in the bread crumb mix
  9. Place the meat in the oven and cook until your desired doneness
  10. Allow it to cool slightly, slice it, and serve
