Ingredients
Servings: 4
- 1 can cream of undiluted chicken soup (condensed, low fat, and low sodium)
- 1 cup of onion (chopped)
- 1 cup of red bell pepper (chopped)
- 1 cup of sharp cheddar cheese (divided, shredded, and low fat)
- 1 packet of low-fat 2%cottage cheese
- 1 tbsp of fresh oregano (chopped)
- 1 tsp of olive oil
- 1/2 cup of fresh Parmesan cheese (divided and grated)
- 1/2 cup of low-fat 2% milk
- 1/4 tsp of black pepper
- 2 cups of chicken breast (shredded, roasted, skinless, and boneless)
- 3 cups of fresh spinach (chopped)
- 3 cups of mushrooms (thinly sliced)
- 4 cups of cooked penne
- Cooking spray
Preparation
Total time: 45 minutes
- Preheat your oven at 425 degrees Fahrenheit
- In a cooking spray coated skillet, heat oil over medium high heat
- Add onion, bell pepper, mushroom, and cook for about 4 minutes
- Add oregano, spinach, black pepper, and cook for about 3 minutes
- In a food processor, put the cottage cheese and process
- Add the spinach mix, pasta, cottage cheese, chicken, 1/4 cup of Parmesan, milk, 3/4 cup of cheddar cheese, and soup in a bowl
- Place the mix into a cooking spray coated baking dish (2 qt.)
- Sprinkle the rest of the Parmesan and cheddar cheese, bake for about 25 minutes, and serve
