3) Caramelized Onion & Jalapeno Relish Cheese Burger (3 of 5)

This Latin burger recipe is spicy, cheesy, and heavenly.
Ingredients
- Ground sirloin – 3/4 pound
- Ground chuck – 3/4 pound
- Mayonnaise – 3/4 cup
- Casings removed and crumbled raw chorizo – 1/2 pound
- Dry bread crumbs – 1/2 cup
- Drained, bottled and sliced jalapeno chilies – 1/2 cup
- Dark brown sugar – 1/2 cup
- Adobo seasoning – 1 tablespoon
- Grated large onion – 1
- Olive oil – 2 tablespoons
- Finely sliced large yellow onions – 2
- Kosher salt and freshly ground pepper, to taste
- Drained medium jarred roasted red bell peppers – 2
- Oaxaca cheese or mozzarella – 6 slices
- Hamburger rolls – 6
Preparation
- Mix the beef, adobo seasoning, chorizo, bread crumbs, and the grated onion in a bowl. Make 6 patties and place them in a waxed paper lined baking pan. Refrigerate for 30 minutes.
- Heat olive oil in a skillet over medium-low heat and add onions, salt & pepper, brown sugar, and jalapeno chilies. Let them cook until the chilies and onions are caramelized.
- Blend the roasted red peppers and add the mayonnaise alongside salt & pepper. The mixture should be smooth.
- Preheat the grill on medium-high heat and place the patties on the grill. Cook until medium-well and top with cheese slices. Set them aside when the cheese has melted.
- Spread mayonnaise on both sides of the buns and place burger patties on the bottom halves. Top the patties with caramelized onion and jalapeno relish, and the top bun.
